1/2 cup olive oil
1/4 cup soy sauce (or tamari for gluten-free)
2 tablespoons Worcestershire sauce
2 tablespoons fresh lemon juice (or red wine vinegar)
2 cloves garlic, minced
1 teaspoon black pepper
1/2 teaspoon paprika (optional)
Pinch of red pepper flakes (optional)
Directions
Combine Ingredients: In a medium bowl, whisk together the olive oil, soy sauce, Worcestershire sauce, lemon juice, minced garlic, black pepper, and optional paprika and red pepper flakes.
Add Steak: Cut 1-1.5 pounds of steak (such as sirloin, filet, or ribeye) into 1-inch cubes. Place the steak cubes in a resealable plastic bag or a shallow dish.
Marinate: Pour the marinade over the steak, ensuring all pieces are well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or for best results, 2 to 4 hours. Do not marinate for more than 6 hours, as the lemon juice can affect the texture of the meat.
Skewer & Cook: Thread the marinated steak cubes onto skewers, discarding the remaining marinade. Grill or broil to your desired doneness.
Notes
- Steak Cuts: Sirloin, ribeye, or beef tenderloin (filet) are excellent choices for skewers as they are tender and flavorful. Cut them into uniform, 1-inch cubes for even cooking.
- Tenderizer: The acidity from the lemon juice and Worcestershire sauce helps to tenderize the meat, while the soy sauce provides a savory, salty base.
- Don't Over-Marinate: The lemon juice can start to "cook" the meat if left too long. 2-4 hours is the sweet spot.
- Don't Re-use Marinade: Always discard the marinade after it has been in contact with raw meat.
- Serving Suggestions: Thread vegetables like bell peppers, onions, or cherry tomatoes onto separate skewers and grill alongside the steak.
