Breakfast Sausage & Veggie Skillet
Need a quick, healthy, and delicious breakfast? This Breakfast Sausage & Veggie Skillet is perfect for busy mornings and is super easy to make, even if you’re new to cooking!
Ingredients
- 1 package (12 oz) breakfast sausage, sliced
- 1 bell pepper, chopped
- 1/2 onion, chopped
- 1 cup broccoli florets
- 1/2 cup cherry tomatoes, halved
- 2 eggs
- Salt and pepper to taste
- Optional: Shredded cheese for topping

- Air Fryer
- Skillet (if not using air fryer)
- Knife
- Cutting Board
Instructions
- Prep Ingredients: Chop the bell pepper, onion, and halve the cherry tomatoes. Slice the breakfast sausage.
- Air Fry (Recommended): Preheat your air fryer to 375°F (190°C). Place the sausage, bell pepper, onion, and broccoli florets in the air fryer basket. Cook for 8-10 minutes, shaking halfway through, until the sausage is cooked and the veggies are tender.
- Skillet Method: Heat a skillet over medium heat. Add the sausage and cook until browned. Add the bell pepper and onion, cooking until softened. Add the broccoli florets and cherry tomatoes, cooking until tender.
- Add Eggs: Crack the eggs into the skillet (or air fryer basket) with the sausage and veggies. Cook until the eggs are set to your liking.
- Season and Serve: Season with salt and pepper to taste. Top with shredded cheese, if desired. Serve immediately and enjoy!
