Recipe: Cauliflower Rice Bowls

Ingredients:
  • 1 head of cauliflower, riced
  • 1 tbsp olive oil
  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup chopped onion
  • 1 cup cooked protein (chicken, tofu, shrimp)
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp sesame oil
  • Optional: sriracha, sesame seeds, green onions for garnish
Equipment:
  • Air fryer
  • Large skillet or wok
  • Knife
  • Cutting board
Instructions:
  1. If you didn’t buy pre-riced cauliflower, rice the cauliflower using a food processor or a grater.
  2. Preheat your air fryer to 400°F (200°C).
  3. While the air fryer preheats, heat olive oil in a large skillet or wok over medium-high heat.
  4. Add bell peppers and onion to the skillet and cook until softened, about 5 minutes.
  5. Add riced cauliflower to the skillet and cook for another 3-5 minutes, stirring occasionally, until slightly tender.
  6. In a small bowl, whisk together soy sauce and sesame oil.
  7. Pour the sauce over the cauliflower rice and vegetables. Stir well to combine.
  8. Add your cooked protein to the air fryer basket. Air fry for 5-7 minutes, or until heated through and slightly crispy.
  9. Divide the cauliflower rice mixture into bowls. Top with air-fried protein.
  10. Garnish with sriracha, sesame seeds, and green onions, if desired.
  11. Enjoy!
Tips/Variations:
  • Customize your protein: Use any protein you like! Tofu, chicken, shrimp, or even chickpeas work great.
  • Add more veggies: Broccoli, carrots, peas, or spinach are all delicious additions.
  • Spice it up: Add a pinch of red pepper flakes or a dash of your favorite hot sauce.
  • Make it ahead: Cook the cauliflower rice and protein separately and store them in the fridge. Assemble the bowls when you’re ready to eat.
