Recipe: Cauliflower Rice Bowls
Ingredients:
- 1 head of cauliflower, riced
- 1 tbsp olive oil
- 1/2 cup chopped bell peppers (any color)
- 1/4 cup chopped onion
- 1 cup cooked protein (chicken, tofu, shrimp)
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp sesame oil
- Optional: sriracha, sesame seeds, green onions for garnish
- Air fryer
- Large skillet or wok
- Knife
- Cutting board
- If you didn’t buy pre-riced cauliflower, rice the cauliflower using a food processor or a grater.
- Preheat your air fryer to 400°F (200°C).
- While the air fryer preheats, heat olive oil in a large skillet or wok over medium-high heat.
- Add bell peppers and onion to the skillet and cook until softened, about 5 minutes.
- Add riced cauliflower to the skillet and cook for another 3-5 minutes, stirring occasionally, until slightly tender.
- In a small bowl, whisk together soy sauce and sesame oil.
- Pour the sauce over the cauliflower rice and vegetables. Stir well to combine.
- Add your cooked protein to the air fryer basket. Air fry for 5-7 minutes, or until heated through and slightly crispy.
- Divide the cauliflower rice mixture into bowls. Top with air-fried protein.
