Ingredients

    • 2 large eggs

    • 1 tablespoon milk or water (optional, for fluffier eggs)

    • Pinch of salt

    • Pinch of black pepper

  • Optional Add-ins (choose 1-3 tablespoons total):
      • 1-2 tablespoons shredded cheese (cheddar, mozzarella, feta)

      • 1 tablespoon finely diced bell pepper

      • 1 tablespoon chopped spinach or kale

      • 1 tablespoon cooked and crumbled bacon, ham, or sausage bits

      • 1 tablespoon finely diced onion or green onion (scallions)

      • A dash of hot sauce

    • Cooking spray or a tiny bit of butter for greasing the mug

Instructions:

  • Prepare Mug: Lightly grease the inside of a microwave-safe mug (at least 10-12 ounce capacity) with cooking spray or a small pat of butter.

  • Whisk Eggs: Crack the two eggs directly into the prepared mug. Add the milk or water (if using), salt, and pepper. Use a fork to vigorously whisk the eggs until the yolk and white are fully combined and slightly frothy, about 30 seconds.

  • Add Mix-ins: Stir in any desired optional add-ins (cheese, veggies, cooked meat, etc.).

  • Microwave: Place the mug in the microwave. Microwave on HIGH for 45 seconds.

  • Check & Continue: Remove the mug and stir the eggs with a fork. If not fully set, return to the microwave and continue cooking in 15-20 second intervals, stirring after each, until the eggs are cooked through and fluffy. (Total cooking time usually ranges from 1 to 2 minutes, depending on your microwave's wattage and the amount of mix-ins.)

  • Serve: Carefully remove the hot mug from the microwave. Enjoy directly from the mug, or slide the cooked egg out onto a plate. Serve immediately with optional hot sauce, a sprinkle of fresh herbs, or on toast.

Notes:

  • Mug Size: Use a mug that is at least 10-12 ounces (about 300-350ml) to prevent overflow as the eggs puff up.
  • Don't Overcook! Eggs can become rubbery if overcooked in the microwave. Cook in short intervals and check frequently. They will continue to cook slightly even after removing from the microwave.
  • Steam Release: Stirring the eggs partway through cooking helps them cook more evenly and prevents them from exploding.
